Licensed to Grill is a catering outfit operated under the guidance of Don Smith. Don is a career “foodie” whose food and beverage career spans more than 3 decades. He has served all kinds of food from formal silver service style French catering to boardwalk concessions. Beginning as a busboy at 13, Don found that hospitality was his calling. He thoroughly enjoys the satisfaction of delivering quality and exceeding expectations crafting an unforgettable experience for his guests. Don’s training began working with several well known chefs in the Phoenix area. Don attended the School Of Hotel Restaurant Management at Northern Arizona University where he was recruited by a company that specialized in large scale recreation water parks. It was there that he developed leadership and team building skills catering large events. His clientele included UPS, Intel, Shure, American Express and many more. With a great latitude of experience behind him he began to follow his passion into the kinds of cuisine that worked best for event planning. Combining fine dining and high expectations for service with the right recipes, Don’s menu and catering system is easily scalable for crowds large and small. Growing up in the southwest has influenced his taste buds and he specializes in a wide variety of cuisine from wood fire roasted meats to handmade tamales. His eggs benedict has been served as breakfast to expedition kayakers and his smoked brisket has been a hit for Fly Fisherman at fly tying shows. LTG caters many different kinds of events from cooking for Oregon’s Governor (and his Paralympic delegation of disabled veterans), to Volunteer Appreciation Day at the VA Hospital.
